Stainless steel is not an easy material to cut. The walls of your device are likely to be quite thin and will distort as you (or anybody else) attempt to puncture a hole. You will probably end up with a raggedy edge on a face that has become buckled where it was previously flat. Fitting a kettle element to such a hole may be difficult to make watertight. Hours of work and nothing to show.
Use a cooking pot instead.
